"Sausage" Pizza
Ingredients:
* Shop bought vegan pizza base of your choice (available in Countdown, Pak n Save, etc.)
* 2 Braai style Fry's vegan sausages
* 1 tbsp. of roasted pine nuts
* 125 gms. of baby spinach
* 2 tbsps. of stoned Kalamata olives
* 1/2 jar of marinated artichokes (drained)
* 35 gms. of vegan cheese of your choice
* 3 tbsps. of tomato pasata
* 1/2 tsp. of dried Italian herbs
* 1/4 tsp. of chili flakes
* 1/4 tsp. of garlic powder
* 1/4 tsp. of onion powder
* Salt and black pepper to taste
* 1/2 tsp. of dried oregano
* 1 tsp. of olive oil
* Fresh basil for garnish
Pre-heat the oven to 200 degree Celsius (for 10 minutes)
Process for tomato sauce:
Combine tomato pasata, chili flakes, Italian herbs, garlic powder, onion powder, pinch of salt and mix well.
Preparing the Pizza:
Smear the sauce on top of the pizza base. Layer the spinach. Add the artichokes, Kalamata olives, sliced "sausages", sprinkle pine nuts, Sprinkle oregano, salt, black pepper and vegan cheese. Drizzle a tsp of olive oil. Place in oven for 12 to 15 minutes. (Check after 12 minutes). Garnish with chopped basil. Slice and serve. Serves one to two people.
